Papayas are pear shaped with a golden-orange flesh and skin when ripe. Their flavour is sweet and tart, and the flesh is silky smooth. You can throw the seeds away or use them to add a peppery flavour to your favourite salad dressing. Try papaya in your next smoothie or roast with brown sugar for dessert.

Mangoes have a firm, fibrous orange flesh and sweet flavour. Their skin is typically greenish-yellow with a red blush covering most of it, but colour isn’t a reliable way of way of testing for ripeness. Instead, squeeze the mango gently. If it’s ripe it will give slightly. Enjoy mango on its own, in fruit salad, or chutney.

Shanghai (or baby) bok choy is a cruciferous vegetable with crunchy greenish-white stalks topped with dark green leaves, both of which are edible. Baby bok choy is slightly sweeter than full-sized bok choy and can be used fresh in salads or cooked in soups and stir-fries.

Long (or Japanese) eggplants are small and narrow with deep purple skin. Their flesh is sweeter than the purple eggplant and they are ideal for grilling on the barbeque. You can also chop long eggplants to use in pastas and stews, or stir-fry with garlic and ginger.

Chinese (or napa) cabbage has thin, cream-coloured leaves with green tips. It has a milder taste than other cabbage varieties and can be used raw or cooked. Shred or chop Chinese cabbage for stir-fries and slaws, or use large outer leaves to make cabbage rolls.
